Seasonal Soup

That cool Autumn breeze is blowing in and with it comes…SOUP! Soup, you say? Aren’t you “raw” ??? Why yes, soup! As long as food is not heated above 115 degrees, all of it’s nutrients and enzymes stay in tact and you reap the full benefits of what you are eating. Soup can be heated so that it is warm to the touch and under 115 degrees…and that makes me super happy because I love soup in the fall and winter months.

I’ve been trying my hand at my own tomato soup recipe and I think I have it pretty close to perfect. See ingredients below!

Lauren’s Tantalizing Tomato Soup (all ingredients are organic)

6 medium sized Roma tomatoes
1 bunch of fresh basil
1 clove of garlic (chopped)
3 tbsp of extra virgin olive oil (first cold pressed)
1 tsp of crystal salt
a dash of oregano
a dash of black pepper

Cut 5 tomatoes in half and toss into blender, add basil leaves, garlic, olive oil, salt and oregano. Blend until creamy. Pour into a pot on the stove and heat just a tad. Dice up 6th tomato and put into soup…and voila! Tomato soup.

If you want the soup to be a tad sweeter you can add 2 dates to the blender to cut the acidity. I might try this soon and add a red pepper to it and some cayenne for an added spicy kick!
