Saying Goodbye to 2010

The year is almost over.Wow.  That was fast.Really fast. A lot has happened this year…and I think as fabulous as it is to make New Years Resolutions, one cannot do that without reflecting on the past year. This past year my Mom was diagnosed with breast cancer.  For a while that really consumed me…my thoughts, my actions…my life became all about healing and health.  I focused all of my energy on my Mom and getting her to have a healthier diet and adopt a healthier lifestyle.  My Mom is cancer free now.  Pretty awesome.  High Five Mama!!! Then a friend

Raw Apple Pie

So healthy, you can eat it for BREAKFAST! That’s right.  Don’t you just love dessert that you can eat any time of day?  Breakfast included?  I sure do.  When I come upon one, I feel the need to tell everyone about it.  So here it is, a raw apple pie. For the CRUST: 1 cup of dates 2 cups of raw pecans For the FILLING: 6 organic pink lady apples 1 cup of organic blackberries 1 handful of organic raisins For the SYRUP: (that you soak the apple-filling mixture in overnight) 1 orange (peel it) 1 handful of blackberries 1/4

A Glass of Sunshine

This morning I had half a glass of green juice – kale, lemon, ginger, celery … followed by 16 ounces of juice made from kale, carrots, beets, and celery.I am totally full.  That was a few hours ago and I am still not hungry.  You might find that strange considering that all I had was juice.  But drinking fresh veggie juice is quite different than drinking a glass of standard orange juice in the morning.  When you make veggie juice using a juicer, you strip the pulp and fiber from the veggies and get straight nutrients in a glass.

Random Things I Learned Today

I’m spontaneous.  Today I spontaneously decided that I’m doing a 30 day smoothie-juice feast, with today being day one.  So far so good.  I drank about 48 ounces of green smoothies and made a raw blended soup.  (soup counts) 😀I learned that if I drink my green smoothie in a coffee mug, no one at work notices, comments, asks questions or makes fun of it.  It’s the strangest thing. I learned that many people never see what is right in front of them.  I have this ball-chair for a chair at work, and people walk past me constantly and never

Parsnip Pecan Breakfast

Remember the days of Cream of Wheat?  Or oatmeal with everything?  It’s just about winter here in PA and the cold weather has already made itself known.  I find myself wanting to eat warm bowls of oatmeal for breakfast every morning – and although that’s not a terrible thing, it’s not a great thing either.  When the weather is warm, all I want is green juice and fruit for breakfast, not big bowls of oats.  I don’t live outside in the woods, so it really makes me wonder why my appetite changes in the winter.  Natural tendency?  Survival instincts kicking

If you’ve been following along with me and doing the challenge, today is day TEN!  That’s right.  Sunday will be day 12, and then you’ll have officially eaten super healthy, unprocessed foods for the past 12 days.  Not a bad start to the last month of 2010 if you ask me!Are you getting your workouts in?  I’ve had to mentally pull it together workout wise – it’s FREEZING here.  Freezing.  It’s the thing I like the least about the East Coast.  I will be so so SO excited to wave goodbye to this weather from 30 thousand feet!  Winters here

Herb Mango Salad

Introducing the Herb Mango Salad You will need greens, herbs (I used dill), zucchini, and mango.   I like to make a giant salad “base” and then add toppings right before I am about to eat it, so the toppings stay super fresh! I topped this with roma tomato and avocado at the last minute. Gather your greens: Add some spiralized zucchini  (if you have no idea what I mean when I say spiralized – check out my resources tab – you will definitely want to purchase a spiral slicer or spiralizer -Spirooli is the best brand ever – and

Mini Cabbage Wraps

Need a quick and super easy lunch or dinner idea?  Don’t we all! Try these mini cabbage wraps!  You can switch up the veggies so that it suits your own personal tastes, but this is what I went with… Cabbage, mushrooms, asparagus and tomato   Take 2 cabbage leaves and lay them together so that they overlap about an inch or two at the edges. Fill them with your veggies of choice (not too much though – or you won’t be able to close the wrap!) I’m pretty much addicted to spicy dijon mustard (eventually I’ll make my own from
