Pumpkin Pie in a Bowl!

This is an amazing soup that tastes JUST like pumpkin pie.  I kid you not.  I would not tease about such an fabulous thing!  This soup recipe originated from Natalia Rose, but you can always adjust it to your personal tastes!  If you are craving something sweet, just make a big batch of this soup.  It will kick that craving in a delicious and incredibly healthy way!  Enjoy!

This will serve two people, feel free to double up this recipe to make more!

2 raw sweet potatoes cubed
1 avocado
16 ounces of fresh carrot juice
1 teaspoon of stevia or another natural organic sugar (you can use 2 to 3 dates, raw agave,  raw honey, etc)
1 teaspoon of pumpkin pie spice*

*Pumpkin pie spice is a blend of ginger, nutmeg, all spice or ground cloves, and cinnamon.  Just mix those together and you will have made pumpkin pie spice!  You can also purchase pumpkin pie spice at your local market, but I like to make it myself since it’s so easy!

~place all ingredients into a food processor and blend. you can then pour it into a pot, place on the stove and heat to the touch.  yes, warm soups are still raw!   if you like things extra creamy, add more avocado. if you like it thinner, add more carrot juice…it’s all about having fun!  enjoy!~
