Easy Raw Summer Pasta

Start out with 4 yellow squash.
Peel them and rinse them.

Using a Spiralizer or Spiral Slicer (mine is made by Spirooli) you will spiralize your squash and it will come out in lovely pasta strands like this!  There are different size blades you can use so if you want the “noodles” to be thicker just use a different blade.

To my “pasta” I added tomatoes, carrots, cucumbers and beets. Feel free to add avocado, garlic, basil, whatever you like!

 You can eat your Raw Pasta with a light dressing of olive oil, sea salt and lemon, or you can go the full “pasta” route and add marinara sauce!  If you don’t have time to make you own raw pasta sauce (super easy -from tomatoes, olive oil, sea salt, basil, garlic – toss in blender)  You can purchase an all natural organic marinara sauce.  You can heat the sauce until it is warm or have it chilled which can be nice on a hot day!

A side note – this recipe can also be made with zucchini, diakon, or any other veggie like that.  Feel free to get creative and mix it up!
