Sunwarrior Protein Breakfast Cookie

Looking for a breakfast that packs a bit more of a punch to get your day started?  Try my version of a breakfast cookie made with Sunwarrior Raw Vegan Protein Powder! Feel free to eat this at any time of day, but I think this would put a smile on your face in the morning 🙂


*Note: This recipe is mostly raw.  I say mostly, because I used organic oats and not raw oats.  You could make this raw using raw oats or raw barley (soaked) if you so desire…but organic gluten-free oats are good with me!  

 
This recipe serves 2 people with appetites.  Feel free to cut the measurements in half if you are just making this for yourself and don’t want any leftovers (who doesn’t want leftovers!!??!!)
In a bowl combine:
2/3 cup of organic oats
1 scoop of protein powder – (I used Sunwarrior Raw Vegan Vanilla Protein Powder)
2 heaping tablespoons of raw nut butter – (I used raw crunchy almond nut butter)

 
 
 
 
 
 
 
 
 
 



 
 
Mix all of the ingredients together with a spoon until you begin to have a good consistency
ADD 1/4 cup of nut milk of your choice and keep stirring with a spoon –   (I used organic almond milk) – the milk really helps it all blend together nicely

 
 
 
 
 
 
 
 
 
 
 



 
That right there is the base of your Protein Breakfast Cookie.  You can now add whatever you like to customize it!
I mashed one whole ripe banana:
And I added that right into the mixture and topped it with a sprinkle of cinnamon, a sprinkle of raw cacao powder and a handful of chopped raw walnuts: 

I mixed all of that together some more and scooped the mixture out into a flat dish and used my spoon to flatten it out evenly.

 

And voilà!  One fabulous Protein Breakfast Cookie!  Now, place your cookie into your refrigerator overnight. It will harden a bit from the nut butter and the oats will soften up from the milk.
When you wake up in the morning, dig in and enjoy!
Feel free to customize this cookie anyway you like! You could add different raw nuts, raisins, a spoonful of raw honey, chocolate chips, dried cranberries…mix it up!

  1. That looks yummy! Kind of like Vegan Overnight Oats… have you tried them? I’m pretty sure it’s raw. I have them almost every morning, or you can make them into a raw/vegan parfait with banana soft serve (any flavor). Got the recipes from ohsheglows.com 🙂

  2. Thank you! I just checked that out – the vegan overnight.. she just uses regular oats. I have raw chia seeds, but raw oats really are hard to come by. True raw oats turn rancid pretty quickly, so most manufacturers steam them before they go out to prevent that (which makes them no longer raw).

    You could also do this recipe using shredded raw coconut in place of the organic oats! 😀

  3. After just having this for breakfast all I can say is WOW. It was super delicious. I could eat this everyday. I’m still getting used to this whole “raw” food concept but my GOD does it taste good, and how insanely healthy it is… just… yeah, lol sorry for rambling but I’m blown away.
