Herb Mango Salad

Introducing the Herb Mango Salad

You will need greens, herbs (I used dill), zucchini, and mango.   I like to make a giant salad “base” and then add toppings right before I am about to eat it, so the toppings stay super fresh!

I topped this with roma tomato and avocado at the last minute.

Gather your greens:

Add some spiralized zucchini  (if you have no idea what I mean when I say spiralized – check out my resources tab – you will definitely want to purchase a spiral slicer or spiralizer -Spirooli is the best brand ever – and that little contraption turns any veggie into pasta-like strands.  It rocks..and it runs around $35)
So here is my spiralized zucchini:

I added ground pepper and mixed it all together.  



So now I have a giant salad “base” for the week and I can add tomato, avocado, cucumber, whatever I like – right before I eat it.


I topped it with a dressing made from the juice of one orange, a dash of raw agave, a teaspoon of dijon mustard and a drizzle of olive oil.


It was fantastic.
