Asparagus Potato Salad

Sometimes I want a cooked veggie meal and this one hit the spot! I boiled red potatoes until cooked – still a bit firm and not too mushy. I baked asparagus on a grill pan in the oven with some garlic, sea salt, pepper and a drizzle of olive oil. I mixed 2 cups of chickpeas with a big dollop of dijon mustard and pepper.   Chop the asparagus into 1 inch pieces and combine all three – potatoes, asparagus and chickpeas into a large bowl.  Mix until combined and drizzle with balsamic vinegar. This was delicious!

Raw Banana Bites

How easy and fun are these??!!!! Slice a banana, add a dollop of raw almond butter {or your nut butter of choice} and top it with another banana slice.  You can enjoy these immediately or pop them into the freezer for a dessert-like treat later on!  They make the perfect pre-workout snack!

Mint Chocolate Shamrock Shake!

  Dairy Free, Vegan, Raw Is Sexy Mint Chocolate Shamrock Shake! Spinach Artichoke Dip

  Spinach artichoke dip is delicious, but it’s usually pretty unhealthy.  Cream and tons of cheese usually fill a bowl in a traditional recipe.  The Raw Is Sexy version is creamy, protein packed, healthy and delicious and perfect for a St. Pat’s party, Sunday Football or all of those warm weather parties! Irish Potato Candies – Raw Vegan

  I love Irish Potato Candies!  I’m half Irish and half Italian.  I’ve been to Ireland a couple of times.  I love my Guinness. Saturday Morning – Mangos and Joshua Micah

I know my body can sense that Spring is almost here when I start craving the sweeter fruits for breakfast.  All I want right now is a pile of fruit and sweet cold smoothies.
