Spinach Artichoke Dip

Spinach artichoke dip is delicious, but it’s usually pretty unhealthy.  Cream and tons of cheese usually fill a bowl in a traditional recipe.  The Raw Is Sexy version is creamy, protein packed, healthy and delicious and perfect for a St. Pat’s party, Sunday Football or all of those warm weather parties!

  • 1 cup of spinach {packed}
  • 1 1/2 cups navy beans or garbanzo beans {makes it creamy and adds protein!}
  • 1 to 1.5 avocados
  • 2 cups of artichoke
  • sea salt and pepper to taste
  • nutritional yeast – 2 tablespoons
  • a bit of lime juice to taste (I squeezed in almost 1 half of a lime)
  • a bit of spring water if you need it for consistency purposes {your personal preference}

Add spinach, beans, artichoke and avocado to the food processor,  blend until desired consistency is achieved.

Add nutritional yeast, sea salt and pepper to taste.  Squeeze half a lime and blend.  If this is too thick/creamy you can add a splash of water but you may not need that at all.

You can serve this in a bowl, in a hallowed out bread roll and warmed in the oven or in a hallowed out cabbage.  Dip with your favorite veggies, raw or gluten free crackers, or Ezekiel bread!

Lovely comments!
