Veggie Burger – Dairy-free, Gluten-free and Awesome

I’m a fan of a GOOD veggie burger. Not a crappy – it-tastes-like-cardboard – veggie burger.  Not a this-whole-burger-is-made-of-soy veggie burger.  Not a this-thing-is-all-corn-and-onions veggie burger and certainly not this-pile-of-mush-is-a-sad-excuse-for-a-veggie-burger veggie burger. I want a BURGER.  Like… sink your teeth into it, full of flavor, crispy on the outside and moist on the inside, pile it with veggies – VEGGIE BURGER. Well folks, that’s what we have here. Refreshing Poolside Smoothie

                          Spending some time in the sunshine? Need to cool off on a hot day?   Try this refreshing combo: 1.5 cups of spinach 1 handful of parsley 1.5 cups of frozen pineapple 1 tsp organic coconut oil 1 cup coconut milk and a bit of water if needed (until your smoothie reaches your desired consistency – some people like them thicker, and some people like them to be more like a juice/drink – all up to you!)

Massaged Kale Salad

                            A massaged kale salad???   What the heck is that?! I haven’t had a massage in a year and I’m expected to massage my kale? YES.  Yes, you are. 🙂 When  you “massage” kale with a bit of water and sea salt, the leaves wilt and soften, making kale more delicious especially for those who find it to be bitter. Black Bean Cilantro Dip

      I’m in love with a dip! Just created what might be a favorite new summer snack! Black bean cilantro dip! I used: 2 cans of organic black beans (rinsed and drained) {you can also buy dry beans and soak/sprout them – but I was in a hurry} 3/4 cup of fresh spicy salsa (I used TJ’s fresh hot salsa) juice of one lime 5 cilantro stems (used the leaves mainly) sea salt to taste Combine all ingredients in a food processor or good blender. If yours seems too spicy- add more lime to cool it down. So

Fruit is in season and I am HOOKED.
