A massaged kale salad???

 

What the heck is that?!

I’m expected to massage my kale?

YES.  Yes, you are. 🙂

When  you “massage” kale with a bit of water and sea salt, the leaves wilt and soften, making kale more delicious especially for those who find it to be bitter.

After I remove the kale from the stems, I break it up into pieces using my hands and place in a bowl.

Sprinkle with EVOO (extra virgin olive oil) and sea salt and massage the olive oil and kale with your hands – the kale will soften and begin to wilt. Then mix in your favorite veggies!  You can also massage the kale with lemon juice and sea salt and drizzle with a creamy avocado green goddess dressing. 

I added peppers, tomato, chick peas and some avocado.

{note: you can also just use water, and not use olive oil, this was just my preference that particular day}
