Black Bean Cilantro Dip





I’m in love with a dip!

Just created what might be a favorite new summer snack!
Black bean cilantro dip!

I used:

  • 2 cans of organic black beans (rinsed and drained) {you can also buy dry beans and soak/sprout them – but I was in a hurry}
  • 3/4 cup of fresh spicy salsa (I used TJ’s fresh hot salsa)
  • juice of one lime
  • 5 cilantro stems (used the leaves mainly)
  • sea salt to taste

Combine all ingredients in a food processor or good blender. If yours seems too spicy- add more lime to cool it down. So light, refreshing and plant-protein-tastic!!!!

Gahhhh I’m just eating it with a spoon! This would be excellent to dip sweet potato fries into!
