Easy Vegan Pumpkin Muffins – Gluten-Free

VEGAN PUMPKIN MUFFINS – Gluten-free, dairy-free, junk-free, nut-free!



  • 3 cups old fashioned oats (I used gluten free)
  • 1.5 cups of organic pumpkin purée (this equals 1 can)
  • 3 TBS Sunflower Seed Butter, 1/4 cup pure maple syrup
  • 1.5 cups water
  • 2 tsp flax seed
  • 3 tsp cinnamon
  • 3 tsp allspice or pumpkin pie spice
  • sprinkle of sea salt

HOW TO: preheat oven to 375. Mix all ingredients in a bowl, grease muffin tin with coconut oil, scoop batter into each muffin tin- fill it to the top because these won’t rise! I topped with a banana slice and sprinkle of cinnamon. Bake for 20-25 mins.

These are so filling and so GOOD!!! Enjoy!

{Makes 12 Muffins}. I could only eat one- they’re that filling!

These are so good, I can’t wait to whip up another batch.  This time I might add chocolate chips, more banana slices, or cranberries! 🙂  Keep your pumpkin treats healthy and your mind and body will thank you.  There is nothing better than eating foods you know are good for you and showing your family and friends that you care about their health and wellbeing by making them HEALTHY treats to enjoy!
