Banana Bread: Gluten-free & Dairy-Free

I had a bunch of ripe bananas that needed to go to use, so I whipped up some banana bread last night.  This easy recipe is a winner!   INGREDIENTS: 4 eggs (or use flax/chia egg substitute for vegan) 2 cups very ripe mashed bananas (I used 5 or 6 bananas) 1 cup sugar (I used coconut sugar – it’s lower glycemic index) ½ cup unsweetened applesauce ⅓ cup coconut oil 2  cups brown rice flour  (used Bob’s Red Mill brand) 1 tsp baking soda ½ tsp sea salt I also added a tbsp. each of cinnamon, nutmeg and pumpkin pie spice

Chocolate Superfood Smoothie

  I am so hooked on Vegan Shakeology.  I start each morning with my superfoods!  It makes such a huge difference in my day when I have it and I always notice if I skip it!  Sometimes I add a scoop to my morning oatmeal and other times I just blend it up in the Vitamix with some frozen banana and water. I’ve definitely tried my share of protein powders but Shakeology is a total wellness drink!  It covers the plant protein, the super greens, superfoods, probiotics, vitamins/minerals…it’s basically my health insurance.  I know once I have it, I’m covered

Raw Zucchini Pasta

I love pasta but I don’t like the heavy feeling I get from eating pasta.  It’s also not as packed with nutrients, as say, vegetables, so zucchini pasta is the perfect solution! All you need is a handy dandy spiral slicer (I use the Paderno World Cuisine Spiral Slicer) and you can turn veggies into pasta-like strands!       Zucchini “pasta” is packed with nutrients and doesn’t leave you with that heavy feeling.  It’s light and refreshing! Four Years In The Clear – An Anniversary of Health

Four years ago this month, I underwent a c-section for dermoids (aka benign tumors), one attached to each ovary. They were referred to as teratomas because of their size (huge – somewhere around 6″-7″). Carrot Cake Breakfast Bars

{nut-free, gluten-free, dairy-free}   I love carrot cake.  I also love breakfast.  So it would make sense that I whip up some carrot cake bars that were less sweet, made from only whole foods and would be perfect for breakfast or a mid-afternoon snack.  A little experimenting in the kitchen, and I came up with this!   Ingredients: 12 large medjool dates (remove pits) 4 large carrots (chopped) 1 c of shredded coconut 1.5 c old fashioned gluten free oats 1/2 tsp baking soda 1/2 tsp sea salt cinnamon/nutmeg/pumpkin pie spice (to taste)  I did about a teaspoon each 4 flax/chia

Kalamata Sunflower Seed Cheese Spread:

Here is an awesome raw vegan SEED cheese!  It’s fantastic for  anyone with a tree nut allergy, anyone who doesn’t eat dairy (me!) or if you just want to try something new!  This is made with sunflower seeds, but could just as easily be made with pumpkin seeds. This fabulous recipe that will satisfy cheese lovers everywhere!   Check it out – you won’t believe how simple this recipe is!   Kalamata Sunflower Seed Cheese Spread:  Dairy-free, vegan, gluten-free    (yields 1 1/2 cups, or 6-8 servings – feel free to double this recipe if you are having a par-tay!)
