Broccoli is one of those amazing cancer fighting cruciferous veggies, so I like to come up with fun ways to include it in my dishes!
To make this salad, I used my spiral slicer to turn zucchini into thick pasta-like strands, and then used my food processor to finely chop up a head of broccoli.
Sometimes people can find broccoli difficult to digest. Steaming broccoli is one way that you can make it easier on your stomach, but if you want to keep it all raw – like I did here – you can just dice it using a sharp knife or use a food processor to do the chopping for you!
I combined the spiral zucchini in a bowl with the chopped broccoli and mixed together. I used sea salt, pepper, oregano, a tablespoon of dijon mustard, extra virgin olive oil and a drizzle of balsamic as the dressing. You could also top this with avocado, but since I used the evoo (extra virgin olive oil) I skipped it.
I’m such a huge fan of spicy dijon mustard. I need to make my own from scratch soon! In the meantime I use a natural high quality one that has no added sugars etc.
