Yes, they’re in love.
Spinach and sweet potato.
They must be since they taste so amazing together.
I used left over cauliflower “rice” from my teriyaki recipe and added raw spinach on top.
Then in a pan, I steamed spinach and sweet potato slices together.
Then I put the steamed spinach and potato combo ON TOP of the raw spinach and cauliflower rice.
Topped it off by adding a drizzle of extra virgin olive oil and sea salt.
That was easy.
