Ingredients (serves 2 people):
- 1 cup of raw chopped or shredded pumpkin – (you can also use 1 cup of store bought organic pumpkin puree)
- 1 ripe banana
- 1/2 of an avocado
- 1 cup of almond milk
- 2 teaspoons of cinnamon
- 2 teaspoons of allspice
- 1/2 teaspoon of stevia (dates work as a substitute)
- 1/2 teaspoon of sea salt
Using a blender or food processor, blend all the ingredients together.
Pour into glasses and chill in the refrigerator for an hour (you can also just eat it right away).
Top with some extra cinnamon to taste and you’re golden!
Substitutions: you can use sweet potato or butternut squash in place of the pumpkin. You could use dates or agave in place of the stevia (if you have none of those, an all natural raw sugar would be fine here too – (you don’ t need much at all because a ripe banana is pretty sweet and that cuts down on the need for additional sweetness)
