Vegan gluten-free, dairy-free apple pie parfait! Bottom layer is just apples put through the food processor with cinnamon, clove, all spice and a dash of agave and then heated in the oven til warm. Then added a dollop of ice cream made from frozen bananas, vanilla extract, almond milk and a pinch of sea salt. Top is a date paste made from madjool dates, water and cinnamon. Insta-hit! Healthy and divine dessert!
Here it is step by step:
I put apples in the food processor to dice them up. Then I sprinkled them with cinnamon, allspice and nutmeg and put them in the oven just until warm to the touch.
Then pulse the frozen bananas in the food processor until it begins to whip into an ice cream consistency! This can take a few minutes.
Then I made a date-paste by putting medjool dates into the food processor and adding a bit of water until it had blended into a chunky syrup consistency.
I assembled my three ingredients and was ready to spoon it into glasses!
