Meal prepping on the weekend will save you so much time during the week. It’s my number one tip for staying on track with a plant based diet. When you have healthy food at the ready, you’ll make good healthy choices. This was a simple meal prep of green peas and potatoes – and I made it this simple to show you that plant based doesn’t have to be fancy, extravagant or complicated. With a plant based diet you can eat anything under the sun and literally…if it grows beneath the sun, it’s plant based! Herbs, sauces and spices are the way to jazz up any meal and take it from ho hum to hizzahhhh! I used spicy fresh salsa to make the potatoes sing and add some spice to the dish.
Complete your meal prepped dish with fruit, sliced veggies for snacking, nuts, or any other all natural snacks. When you get home from work feeling stressed, tired or cranky, just grab one of these, heat it up and enjoy a healthy dinner. No muss, no fuss. No stress eating that bag of chips or box of cookies. You’ll be prepared and preparation helps you win and reach your goals.
